Whether you’re cooking Topless (using only a bottom bun) or Naked (using no bun), these turkeys are sure to please. And even if you choose to go with a both buns (pictured above), with a price tag of only 255 calories, everyone is free to indulge.
The Naked Turkey
Calories per serving: 255 with bun
Prep Time: 15 minutes
1 lb ground turkey
1/2 small yellow onion, finely chopped
1/2 tsp smoked chipotle chile pepper
1/2 tsp course black pepper
1/2 tsp salt
5 small hamburger buns
Red cabbage, thinly sliced
Place the ground turkey, chopped onion, and spices in a medium-sized mixing bowl. Mix well. Shape into 5 patties. Let the patties sit for 10 minutes to develop flavor.
Heat 1 tablespoon of olive oil in a large pan. When hot, add the turkey patties. Cook for 3-5 minutes on each side, until well browned and cooked through.
In the same pan, place buns open side down and cook for 2-3 minutes. Serve with cabbage slices and chives immediately.
If you’re feeling particularly indulgent, make a delicious aioli to go with your Naked Turkeys. Any mayonnaise will do, but I prefer to use Nom Nom Paleo’s award-winning mayonnaise recipe (although I typically use pecan oil, rather than the recommended avocado or macadamia oil).

5 Tbsp mayonnaise
1 clove garlic, smashed
1 tsp wholegrain mustard
Mix the mayonnaise, garlic, and wholegrain mustard. Allow the aioli to sit at room temperature for at least 10 minutes to develop flavors before serving.
